CARAMELIZED ONION DIP

CARAMELIZED ONION DIP 〰️

Like the onion dip you used to eat at parties, but now you don’t… because you eat this. It’s good, trust me, eat it.

Ingredients:
1 sweet onion, sliced
1 yellow onion, sliced
3 cloves of garlic, halved
3 green onions, cut into 2-inch segments
4 shallots, sliced
3 garlic scapes, cut into 2-inch segments, saving some for garnish (optional!)
Greek yogurt or sour cream
1/2 cup olive oil
Lemon zest, to top
Flaky salt, to top

Recipe:
1. Slice/cut the onions and garlic.


2. Add them to a nonstick pan with the oil, and bring to medium-low heat.


3. Buckle up, this takes some time. Caramelize the onions until they are a deep brown color and jammy. You have to constantly stir them so they don’t burn. This took me about 45 mins.


4. Once caramelized, remove the onions and oil from the heat. Strain the oil from the onions, and SAVE the oil for drizzling.


5. Add Greek yogurt or sour cream to the plate. Drizzle with the onion oil and top with the caramelized onions.


6. I like to garnish mine with flaky salt, lemon zest, and red pepper flakes. If you saved any of the garlic scapes, I also like to char those and add them as a garnish as well (but that’s not necessary)!


7. Dip in with a chip and enjoy with a nice, frosty bev.
